All pork you’ll find on this site is either the Berkshire breed or the Duroc breed, and we do this for two reasons. 1. Because in my humble opinion, they are the best two commercially available breeds available today, and 2. Because I said so!
And now, a quick study on how to damn near ruin a perfectly good commodity. Years ago, say 20-25, the major pork packers decided that what the public wanted was a leaner pork chop. So they made the decision to move away from these two breeds, along with others, and to source breeds that had less, if any, marbling and greatly reduced fat in general. Come on and admit it, for years, pork for dinner was close to punishment. Worse than that, imagine all the lovely gals (and guys) who thought they were pork chop cooking failures because try as they might, they could not cook a tender pork chop. I can’t tell you how many times customers have told me they don’t know how to cook pork……WRONG! It’s the producers who didn’t know how to provide a quality product; but all that’s changed now and there’s no turning back. So put aside what you thought you knew pork tasted like, and give these beauties a try. Trust me, you won’t be let down.
